Ingredients
- 10 cups popped popcorn
- 1/2 cup butter

- Place popcorn in a Large mixing bowl and set aside.
- Melt butter with sugar and Corn Syrup in a medium saucepan.
- Add in Jello mix.
- Bring to a bowl over medium heat stirring occasionally. Once boiling, continue to boil for 4-5 minutes, If using a candy thermometer, you’re going for the soft ball stage, 240 degrees.
- Pour syrup over pop corn and toss to coat.
- Spread out on cookie sheet and bake in a preheated 200 degree oven for 45 minutes, stirring every 15 minutes. Remove from oven and let cool completely.

*I tried making a batch of raspberry Jello popcorn with brown sugar and another batch of Berry Blue Jello popcorn with white sugar, and then another with brown sugar. Interestingly, the final taste profile was quite similar across both sugar types. Feel free to use whichever you have on hand or prefer.
**A key observation: the Berry Blue Jello looked beautifully blue in both batches before baking. However, after baking, it consistently turned to a green hue. This can be a fun surprise, but if you’re aiming for a specific blue, be aware of this color shift! Raspberry Jello, on the other hand, maintained its wonderful bright red color, simply becoming a bit darker and more intense after baking. Choose your Jello color accordingly, keeping in mind how heat might transform it.
