Ingredients

Sweet potato muffin

  • 3 cups mashed sweet potato
  • 2 cups all purpose flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla

Praline topping

  • 1/2 cup butter, melted
  • 1 cup chopped pecans
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease muffin tins.
  3. Measure out the flour, cinnamon, baking soda, baking powder and salt. Set aside.
  4. Mix sweet potatoes, sugar, oil, eggs and vanilla in large mixing bowl.
  5. Add flour mixture and stir in completely.
  6. In a separate bowl combine all of the praline topping ingredients and combine well.
  7. Fill muffin tins 3/4 full with muffin mix. Add praline topping.
  8. Bake for 35 minutes or until knife inserted in the middle of the muffin comes out clean.

Notes

I baked my sweet potatoes for about an hour until they were very soft to the touch.

The muffins will be very moist and a little dense almost like a pumpkin bread.
