A few weeks ago, I had an extraordinary opportunity that still fills me with joy and inspiration. Pillsbury extended an invitation to their renowned test kitchens in Minneapolis, Minnesota, and it was an experience I’ll never forget! If I ever considered a full-time career change, working for Pillsbury would be at the top of my list. The atmosphere there is simply magical – it has to be one of the happiest and most innovative places on earth to work. Beyond the incredible environment, my long-standing love for their high-quality products, especially their versatile crescent dough, only deepened during this visit.
But the invitation wasn’t just for me; it was a gathering of 15 other talented food bloggers. Many of them were online friends I’d known for years, and I was thrilled to forge new friendships with others I met for the first time. The camaraderie was instant and deeply enjoyable. Imagine a group of people, all sharing the same passion for cooking, baking, and experimenting in the kitchen – it’s a recipe for an absolutely fantastic time! There’s truly no way to go wrong when you’re surrounded by such enthusiastic and creative individuals.

Hands-On Experience: From Test Kitchen to Photo Studio
Pillsbury thoughtfully divided us into two groups, ensuring everyone had a chance to immerse themselves in different aspects of their culinary world. My morning was spent in the bustling test kitchen, where new recipes are born and perfected, and the afternoon transitioned to their professional photography studios, where food artistry truly comes to life. I immediately partnered with Kate, and we had a blast. Our first task was to recreate the million-dollar prize-winning Loaded Potato Pinwheels, utilizing their ingenious seamless crescent dough. These pinwheels were not only incredibly fun to make but also visually stunning. You can see just how delicious they look in the photo, and I can assure you, they tasted even better than they appeared!

The moment I stepped out of the Pillsbury test kitchens and started my journey home, I knew exactly what I wanted to create in my own kitchen. Spinach dip has always been a beloved staple in my household – it’s a classic, easy-to-whip-up appetizer that everyone enjoys. However, I’ve noticed a peculiar trend: about halfway through eating it, everyone seems to lose interest in dipping. Yes, I might have a few “lazy” eaters in the house, but I think it’s more about convenience during lively gatherings.
My personal theory is that whenever we have a game on TV, a bustling party, or just a casual get-together, it feels like too much effort to meticulously scoop out a serving of dip and then grab some chips. People prefer appetizers they can simply grab with one hand and enjoy on the go. This desire for effortless enjoyment fueled the creation of these Spinach Dip Bites.
True to my theory, these Spinach Dip Bites vanished in a flash at our next gathering, proving once again that if you make food easy and convenient to eat, people will devour every last piece! Spinach Dip Bites

Ingredients
- 2 cups chopped frozen spinach, thawed
- 1 6 ounce jar Artichoke Hearts, drained and chopped
- 1 teaspoon chopped garlic
- 2 tablespoons grated parmesan cheese
- 4 ounces Cream Cheese, softened
- 1/2 cup shredded mozzarella cheese, divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 can seamless Pillsbury Crescent Dough
Instructions
- Combine spinach, artichoke hearts, garlic and Parmesan cheese in a mixing bowl. Blend in cream cheese and 1/4 cup of mozzarella cheese. Season with Salt and pepper. Set aside.
- On a large cutting board, unroll crescent dough, lightly stretch dough, using a rolling pin, to a 8 x 12 rectangle. Cut dough into 2 inch squares so you have 24 squares. Place each square into a lightly greased mini muffin tin. Gently push down to create a indentation. (you don’t have to mold it to the cup.)
- Place one rounded teaspoon of your spinach mixture on top of each crescent square and gently push in, just to secure. (The Bites will drop and mold to your tin while baking.) Divide the remaining mozzarella cheese over the tops of each cup.
- Bake in a preheated 375 degree oven for 15 minutes, just until a perfect golden brown. Let rest in tin for 5 minutes before removing to serving tray.
Notes
This recipe is incredibly versatile! Feel free to add a pinch of red pepper flakes for a little heat, or a sprinkle of everything bagel seasoning on top for extra flavor and texture. For make-ahead convenience, you can prepare the spinach mixture a day in advance and store it in the refrigerator. Just assemble and bake when you’re ready to serve!
