Chocolate Meringues Bite Size

Delicious chocolate meringues, perfectly piped and ready to melt in your mouth.

Ingredients

  • 1 egg white (room temperature)
  • 1/4 teaspoon cream of tartar
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoon cocoa powder

Instructions

  1. Place eggs in a medium bowl and start whipping. A hand mixer is easiest if you only have 1 or two egg whites. Once your eggs turn foamy (white), you can add the rest of the ingredients. Continue whipping until stiff peaks form. To pipe, take a plastic bag and place it in a wide-mouthed cup, with the sides folded over. Scoop your beaten egg whites into the plastic bag. Twist the top of the bag closed, then cut the corner off the bottom of the bag to make a small hole (about 1/2 inch). Now, have fun placing small “kisses” onto a parchment-lined pan.
  2. Place the pan in a preheated 225-degree F (105-degree C) oven for 25-30 minutes. After this time, turn off the oven and leave the meringues inside for at least 2 hours, or even overnight. Just “forget” about them! This allows them to dry out and become perfectly crisp.
  3. Store your finished chocolate meringues in an airtight container, such as a mason jar, to maintain their crispness.

Notes

Just multiply this recipe for however many egg whites you have. If you don’t have cream of tartar, don’t worry about it – you can leave it out, though it does help with stability.
