Chocolate Chip Skillet Butter Cake

The star of the show: a perfectly baked Chocolate Chip Skillet Butter Cake, ready to be enjoyed.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1 cup mini chocolate chips

Instructions

  1. Cream butter and sugar with mixer for 5 minutes, until fluffy. Add in eggs one at a time, mixing well after each addition. Add in vanilla and mix again.
  2. Combine flour and baking powder. Alternating, add in flour and milk to your batter, starting and ending with flour mixture.
  3. Fold in Chocolate chips.
  4. Spoon batter into a well greased 10 inch (9 inch will work too) cast iron skillet. Bake in a preheated 350 degree oven for about 30 minutes. Test for doneness using a toothpick.
  5. Remove form oven and let cool for 20 minutes before serving warm or let cool completely. Dust with powdered sugar if desired.

Notes

This cake can also be baked in a 9 inch round cake pan or for a thin cake use a 9×13 pan. (for 9×13 reduce time to about 22 minutes)

This versatile recipe adapts beautifully to different bakeware. If you don’t have a cast iron skillet, a standard 9-inch round cake pan will yield a lovely result. For a thinner, more sheet-cake-like dessert, a 9×13 inch pan works wonderfully; just be sure to reduce the baking time to approximately 22 minutes, keeping an eye on it for doneness.
