As autumn was gently settling in, painting the leaves with hues of gold and crimson, apples emerged as the perfect, quintessential choice for September’s theme. Apples, with their delightful crispness and versatility, hold a special place in my heart; they are, without a doubt, my favorite fruit. Their natural sweetness and slight tartness provide an excellent counterpoint to the richness of chocolate, making them an ideal partner for a seasonal dessert. In fact, if memory serves me right, they were the only fruit I would willingly eat during my childhood!

With the “Chocolate Party” theme of apples and chocolate firmly in mind, and a somewhat limited timeframe to craft a new recipe, I found myself racking both my brain and my husband’s for innovative ideas. We tossed around several delectable concepts, including a tempting apple crumb pie with a generous drizzle of melted chocolate – a concept I’ve now dutifully noted down to make for my husband in the near future! However, for this particular challenge, I wanted something that could be made in smaller, more manageable proportions, something delicate yet impactful that truly highlighted both star ingredients.

It had been quite some time since I last attempted to make crepes, and frankly, my previous endeavors hadn’t been entirely successful. This challenge presented itself as the perfect opportunity for a triumphant return to crepe making. The idea of pairing light, airy crepes with warm, spiced caramelized apples and a luxurious chocolate sauce immediately sparked my imagination. These Crepes with Caramelized Apples and Chocolate Sauce were not just a recipe; they were a chance to refine my skills and prove to myself that I could master the art of crepe creation, delivering a delicious result that looked as good as it tasted.

During my recipe testing, I meticulously tried these crepes both with and without the chocolate sauce. While the caramelized apples alone offer a delightful experience with their tender texture and sweet-tart flavor, I must admit – and perhaps I’m a tad biased when it comes to chocolate – that the chocolate sauce truly elevates this dish to another level. You can easily prepare both your crepe batter and the caramelized apples in advance. The crepe batter benefits immensely from resting in the refrigerator for at least 30 minutes, or even overnight, allowing the flour to fully hydrate and resulting in a smoother, more pliable crepe. This rest time also helps develop the flavor and creates a more delicate texture. The caramelized apples can also be made ahead of time and gently reheated just before serving. This forward-thinking approach means that when you’re ready to serve, it takes mere minutes to cook up the delicate crepes, assemble, and delight your family or guests with a freshly made, warm treat.

Making perfect crepes might seem daunting at first, but with a little practice and a few key tips, you’ll be flipping them like a pro in no time. The goal is thinness – the thinner the crepe, the more elegant, delicate, and melt-in-your-mouth the final result. A small sauté pan (about 6-8 inches) with a non-stick surface is ideal for best results, and remember to lightly butter or oil the pan for each crepe. The trick lies in pouring just the right amount of batter (approximately 2-3 tablespoons for a small pan) and quickly tilting and rotating the pan to spread the batter thinly and evenly across the entire bottom surface. Don’t be discouraged if your first crepe isn’t absolutely perfect; consider it your “test crepe” to adjust the heat and batter quantity. You’ll quickly get the hang of the wrist motion and the perfect golden coloring you’re aiming for.

  • 1 teaspoon unsalted butter (just a small pat for richness)
  • 1 tablespoon brown sugar (light or dark, for a deeper caramel flavor)

For Serving:

  • Prepared chocolate sauce (homemade or your favorite good-quality store-bought variety)

Instructions

  1. Prepare the Crepe Batter: In a blender, combine the egg, all-purpose flour, milk, water, melted butter, and a dash of salt. Blend on high until the mixture is completely smooth and free of any lumps. Transfer the batter to a bowl, cover it tightly with plastic wrap, and refrigerate for at least 30 minutes. This crucial resting period allows the flour to fully hydrate and the gluten to relax, resulting in more tender, pliable crepes that are significantly easier to cook without tearing.
  2. Prepare the Apples: While the crepe batter chills in the refrigerator, begin preparing your apples. Core and slice the tart apples. You have the option to peel them or leave the skin on for added texture, fiber, and a rustic appeal; I personally find leaving the skin on enhances the dish’s character. Aim for slices that are about ¼-inch thick, as they will cook down to a perfect tender consistency.
  3. Caramelize the Apples: In a medium-sized frying pan, melt the teaspoon of butter over medium-low heat. Add the sliced apples and the tablespoon of brown sugar. Stir gently to ensure the apples are evenly coated with the sugar and butter mixture. Simmer the apples slowly, stirring occasionally, until they become beautifully soft and tender, which typically takes about 15 minutes. As they cook, the brown sugar and natural apple juices will combine to create a luscious, syrupy sauce at the bottom of the pan – this caramelized goodness is key to the flavor! Remove from heat and set aside to keep warm.

  5. Cook the Crepes (Practice Makes Perfect!): This step often takes a little practice to perfect, but don’t worry, you’ll master it quickly, usually by your second or third crepe! Heat a small sauté pan (a non-stick pan approximately 6-8 inches in diameter works best) over medium heat. Melt a tiny bit of butter (or use a light spray of cooking oil) to lightly grease the pan. Using a small ladle or large spoon, pour approximately 2-3 tablespoons of the rested batter into the center of the hot pan. Immediately tilt and rotate the pan in a circular motion to spread the batter thinly and evenly across the entire bottom surface. You want your crepes to be very thin – the thinner they are, the more elegant and delicate the final result.

Think of it like cooking pancakes, but aiming for a much thinner, more delicate, and beautifully golden result on both sides.
