Lemon Blueberry Pound Cake

Beautifully glazed Lemon Blueberry Pound Cake, perfect for any occasion.

Ingredients

  • 1 3/4 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup (4 ounces) cream cheese, softened
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/4 cup fresh lemon juice
  • 3 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 2 cups fresh blueberries (or blackberries, raspberries for variations)

for Lemon Glaze

  • 1/2 cup powdered sugar
  • 3-4 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175°C). Thoroughly grease and flour a standard bundt pan. For pound cakes, a good grease and flour is crucial – avoid cooking sprays, as they can sometimes lead to sticking. Trust me on this one!
  2. In a large mixing bowl, cream together the softened butter and cream cheese until light and fluffy. Gradually add the granulated sugar, beating until the mixture is well combined and creamy. Add the eggs one at a time, ensuring each egg is fully blended into the batter before adding the next. Stir in the lemon juice and vanilla extract, then beat for an additional 2-3 minutes until everything is thoroughly incorporated and smooth. This step ensures a wonderfully airy base.
  3. In a separate small bowl, gently toss your fresh blueberries (or other berries) with 2 tablespoons of the measured flour. This light coating of flour helps prevent the berries from sinking to the bottom of the cake during baking, ensuring they are evenly distributed throughout.
  4. In another medium bowl, combine the remaining flour with the baking powder, baking soda, and salt. Give it a quick stir with a fork to ensure all dry ingredients are evenly distributed.
  5. Now, it’s time to incorporate the dry ingredients and sour cream into the wet mixture. Alternate adding the flour mixture and sour cream to the batter, beginning and ending with the flour. Mix well after each addition, but be careful not to overmix. Your batter will be wonderfully thick and rich.
  6. Gently fold in the flour-coated berries. You don’t need to get them perfectly blended; just ensure they are somewhat evenly dispersed within the thick batter.
  7. Spoon the batter evenly into your well-greased and floured bundt pan. Smooth the top with a spatula.
  8. Bake in the preheated 350°F (175°C) oven for 1 hour to 1 hour and 15 minutes. To test for doneness, insert a wooden skewer or toothpick into the center of the cake; if it comes out clean, your cake is ready. Allow the cake to cool in the pan on a wire rack for 10 minutes before carefully inverting it onto a serving plate to cool completely.
  9. Let the cake cool completely to room temperature before applying the glaze. This is crucial to prevent the glaze from simply melting off.
  10. For the glaze: In a small bowl, whisk together the powdered sugar and 3-4 tablespoons of fresh lemon juice until the sugar is fully dissolved and the mixture is smooth and pourable. Adjust the lemon juice amount to achieve your desired consistency – a thicker glaze for a more opaque finish, or thinner for a delicate drizzle. Drizzle generously over the top of the cooled pound cake. Slice and serve!
