I encountered several articulate Presidents, majestic Royalty, a remarkably convincing King Henry VIII along with a few of his wives, and brave American Indians who eloquently spoke of their journey on the Trail of Tears. There was even a brilliant student portraying the first dog launched into space – her knowledge was truly impressive!

My own beautiful daughter made a bold choice, deciding to embody the infamous pirate Blackbeard! She delved deep into his history, learning every fascinating detail. Did you know Blackbeard was only an active pirate for two years? Neither did I, until she informed me! She also shared the gruesome detail that he used to weave burning coals into his beard to create smoke, an intimidating tactic to terrify his captives. And her absolute favorite fact, guaranteed to keep any kid interested, was that it took five bullets and over twenty knife wounds to finally bring him down in his last battle. It’s amazing how a little bit of historical gore can make learning so captivating!

All the students delivered truly exceptional performances, demonstrating immense effort and dedication. It was clear they all deserved a sweet reward for their hard work, and what better treat than a homemade, moist Chocolate Applesauce Bundt Cake? It was the perfect way to celebrate their achievements and thank them for making history come alive.

We still have two more exciting years of middle school ahead, and I can’t wait to see which historical figure she chooses to bring to life next. Chocolate Applesauce Bundt Cake

Perfect Chocolate Applesauce Bundt Cake

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 1 1/2 cup sugar plus 2 tablespoons
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cup applesauce
  • 1/2 cup buttermilk

Instructions

  1. Grease a bundt pan (do not use cooking spray) then use 2 tablespoons of granulated sugar to dust your pan. Set aside.
  2. Cream together butter, oil and remaining 1 1/2 cups sugar. Add in eggs, one at a time making sure to scrape down sides of bowl. Add in vanilla and mix again.
  3. Stir together flour, cocoa powder, baking soda and salt, just to blend.
  4. Stir together applesauce and buttermilk.
  5. Alternating, add flour mixture and applesauce mixture to your butter mixture, making sure to fully incorporate after each addition.
  6. Spoon batter into prepared pan, Bake in a 325 degree oven for 1 hour. Test for doneness using a toothpick, if it comes out clean (no crumbs) cake is ready. Let cake rest in pan for 30 minutes before inverting onto a rack to cool completely.
