Ingredients

  • 2/3 cup white sugar
  • 2 tablespoons cinnamon
  • 1 piece store bought puff pastry, defrosted but still cold

Instructions

  1. Preheat oven to 450 degrees and line a baking sheet with parchment paper.
  2. In a small bowl add sugar and cinnamon. Mix together until combined. If you want more cinnamon flavor feel free to add more cinnamon.
  3. Spread half the cinnamon sugar over a large cutting board (or counter top) and place the puff pastry overtop the cinnamon sugar. Add the rest of the cinnamon sugar over top the puff pastry. Spread out until the whole puff pastry is covered.
  4. Using a rolling pin press gently on the puff pastry to help press the cinnamon sugar into the dough on both sides. This will also help roll out the seams in the puff pastry and stretch out the dough just a little.
  5. Roll both of the long sides tightly up until they meet in the middle. Cut cookies in 1/2 inch slices and carefully (you don’t want to lose that cinnamon sugar filling) place onto the prepared baking sheet. Make sure to leave a little space between the cookies as they will puff up a bit while baking.
  6. Bake 6-8 minutes or until they are lightly browned and puffed.
  7. Remove from the oven and let cool.
