This vibrant city offers an incredible culinary landscape, from the freshest seafood along the coast to an abundance of inland produce. All of this bounty converges at iconic locations like Pike Place Market and in the diverse local restaurants that dot the city.

My first visit to Seattle was more spontaneous, a delightful wander through its unique neighborhoods and hidden gems. I remember a particularly memorable outing with friends to Glassybaby. This company’s story is truly inspiring: founded by a woman who saw a need and created a business with the sole purpose of giving back to those in need. Their hand-blown glass votives and drinking glasses are beautiful, but the mission behind them is even more so. It’s a wonderful example of Seattle’s community spirit.

After leaving the Glassybaby shop, we glimpsed the sparkling water in the distance and decided to head downhill. Our stroll led us to an unexpected and charming discovery: the cutest little Lending Library box nestled outside a house. It wasn’t until my friend Kathy later posted it on Instagram that we realized we had been standing right in front of Kurt Cobain’s former home. It was a poignant and memorable moment, adding a touch of rock history to our casual exploration.

And, of course, no Seattle visit is complete without witnessing the majestic beauty of Mount Rainier. On that particular day, the view was absolutely perfect, a breathtaking backdrop to the bustling city, reminding you of the incredible natural beauty that surrounds this urban hub.

Savoring Seattle: Chocolate & Market Tours

This time, arriving in Seattle for IFBC, I wanted a more structured and “touristy” experience to truly immerse myself in the city’s culinary heart. My friend Christy highly recommended Savor Seattle Food Tours, and I immediately signed up for two: the indulgent Chocolate Indulgence Tour and the comprehensive VIP Pike Place Market Tour. Each tour promised a unique journey, offering samples of incredible local specialties at every stop. It was on one of these tours that I first encountered the legendary Dahlia Bakery cookie, setting me on a mission to recreate it at home.

One of the most anticipated stops on the Chocolate Indulgence Tour was, without a doubt, Dahlia Bakery. The moment I bit into their Dark Chocolate Truffle Cookie, I knew I had to bring that experience home. The good news? I didn’t even have to attempt to reverse-engineer the recipe. It’s proudly featured in The Dahlia Bakery Cookbook, and thankfully, readily available online. This made my post-Seattle baking project incredibly exciting!

Dark Chocolate Truffle Cookies

Perfectly baked Dark Chocolate Truffle Cookies

Ingredients

  • 20 ounces dark chocolate, chopped (I used dark chocolate chips)
  • 1 1⁄4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1⁄2 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 10 Tablespoons butter, softened
  • 2 1⁄4 cups sugar
  • 6 large eggs, lightly beaten
  • 1 tablespoon vanilla extract
  • Generous 2 cups dark chocolate chips

Instructions

  1. Place 20 ounces dark chocolate in a large microwave safe bowl and heat in microwave on high for 1 minute. Let chocolate rest for a minute and then stir. If needed, heat for an additional 30 seconds until chocolate is completely melted and smooth. Set aside to cool.
  2. Sift together flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, combine butter and sugar, beating until well combined. Add in beaten eggs and continue beating on medium speed until batter turns light in color, about 3-4 minutes.
  4. Turn mixer down to low and add cooled, melted chocolate and vanilla. Mix just until combined.
  5. Gently fold in the flour mixture by thirds using a wooden spatula or spoon, just until all incorporated. Add chocolate chips and fold a few more times.
  6. Using a medium cookie scoop, spoon dough onto a parchment-lined baking sheet, spacing cookies 3 inches apart. Bake in a preheated 350 degree oven for 11-13 minutes. Do not overbake. Let cookies cool on pan for 10 minutes before removing to cooling racks to cool completely. Store in an airtight container.

While tempting, I chose to use a medium cookie scoop to create regular-sized cookies for my homemade batch. This way, I can enjoy a small stack of these irresistible treats without any guilt, savoring each bite of their rich dark chocolate goodness!

My Savor Seattle Chocolate Indulgence Tour Experience

As I mentioned, I first encountered these incredible Dark Chocolate Truffle Cookies during my Savor Seattle Chocolate Indulgence Tour. It happened to be a rainy day, but even the classic Pacific Northwest drizzle couldn’t dampen the spirits of a true chocolate lover! Our tour guide, Nick, was an absolute delight. He was not only brimming with fascinating knowledge about Seattle and Pike Place Market but also had a knack for entertaining us with humor and charm, making the tour both educational and incredibly fun.

Our chocolate adventure began at Cupcake Royale. Naturally, I wasn’t alone on this delicious journey; chocolate is always better when shared with friends! At each stop, we savored a taste of what the shop specialized in, immersing ourselves in Seattle’s sweet side.

Pictured above, enjoying the start of our tour, were my wonderful friends: Hayley, Holly, Roxana, Lynne, myself, and Dorothy. Thank goodness this was a walking tour! Even with the portions being “taste” size, we found ourselves wanting to devour every single crumb from each delicious stop.

At Dahlia Bakery, our group enjoyed not only the famous Chocolate Truffle Cookies but also mini versions of their delightful Coconut Cream Pie, elegantly topped with delicate chocolate shavings. This tiny bakery is a true treasure trove, packed wall-to-wall with an tempting array of sweets, cakes, pies, and, of course, their signature cookies. I can wholeheartedly recommend trying this pie if you ever get the chance – it’s a slice of heaven!

My personal favorite stop on the entire chocolate tour was The Confectional. Located conveniently across from Pike Place Market, they specialize in exquisite cheesecakes, but the true highlight for me was their drinking chocolate. This isn’t just hot cocoa; it’s a thick, incredibly rich, and velvety experience. And for the adventurous souls, I highly recommend trying it with a dash of cayenne pepper. Holly and I dared to try it, and it was a revelation! The first sip offers just a hint of pepper, then a few sips later, you begin to feel a pleasant warmth. By the last drop, it’s a full-on, yet still delightful, heat. An unforgettable taste sensation!

Exploring Pike Place Market: The VIP Early Morning Tour

The very next day, we embarked on the VIP Early Morning Pike Place Market Tour, designed to experience the market before the main crowds descend. Our guide for this adventure was Brett – two Ts, no N. If you ever meet Brett, you’ll instantly get the joke, as he has an endless supply of them! After a lively introduction, our first quirky stop was the infamous Gum Wall.

Imagine an entire alleyway, both sides covered from the street as high as a person can reach, with layers upon layers of chewing gum. It’s a bizarre, colorful, and surprisingly captivating sight. Just make sure not to lean against these walls!

This early morning tour provided the perfect opportunity to kick off the day with a hearty breakfast. And what better way to start than with warm, fluffy biscuits? Our first culinary stop was Honest Biscuits.

Served fresh from the oven, we indulged in tender, flaky cheddar biscuits paired with a hot cup of coffee. These biscuits were so good, I honestly could have eaten the entire tray myself! They were the perfect savory start to our market exploration.

As we walked between stops, Brett shared fascinating historical facts about Pike Place Market, pointed out unique architectural features, and, of course, kept us laughing with his trademark corny jokes for every occasion. His passion for the market was infectious.

One of the market’s truly hidden treasures is the Urban Garden, nestled quietly on a rooftop of one of the buildings. This beautiful oasis was created by the Pike Place Market Preservation & Development Authority in collaboration with the Seattle Urban Farm Company. They transformed an unused, closed-off space into a thriving garden. It’s a testament to community effort, maintained by dedicated volunteers, with all its fresh produce generously donated to local food banks and senior centers. It’s a peaceful escape amidst the market’s hustle and bustle.

Of course, a comprehensive breakfast tour also calls for donuts! Our next stop was the legendary Daily Dozen Donut Company.

Daily Dozen Donut Company, located right in Pike Place Market, produces delightful mini donuts served hot straight from the oil, generously covered with cinnamon sugar. For the more adventurous, they also offer unique flavors like maple bacon. These were so irresistible that I found myself returning the very next day for a second helping – I simply couldn’t help myself!

You simply cannot beat the fresh seafood in Seattle, and I don’t believe it gets any fresher than what you find right at Pike Place Fish Market.

Pike Place Fish Market is world-renowned not just for its entertaining “tossing fish” tradition but also for offering some of the absolute best and freshest seafood in the entire market. During our tour, we were treated to samples of three different flavors of smoked salmon. I brought home some of the traditional variety (they thoughtfully pack it with a frozen gel pack for travel), but the pepper-infused salmon was also exceptionally good. It’s a true highlight for any seafood enthusiast.

Our tour also included a stop at Beecher’s Handmade Cheese, where we had the unique opportunity to watch cheesemaking in huge vats, a fascinating process from start to finish. And, of course, the best part: sampling their incredible products.

I can confidently say that the Mac and Cheese at Beecher’s Handmade Cheese might just be the best Mac & Cheese I have ever had in my life. The rich, creamy texture and depth of flavor were simply unparalleled – a true comfort food masterpiece.

Both the Chocolate Indulgence Tour and the VIP Pike Place Market Tour fittingly conclude at Fran’s Chocolates. They say to always save the best for last, and in this case, it’s absolutely true. I am still dreaming of her exquisite salted caramels, a perfect sweet and salty finale to an unforgettable culinary exploration of Seattle.
