I must admit, my foodie friends have a knack for nudging me out of my culinary comfort zone. Typically, I’m not one to combine fruit with chocolate, with a few notable exceptions, of course. There’s an undeniable magic to a classic chocolate-covered strawberry, and pineapple dipped in rich, melted chocolate is simply divine. Oh, and apples! Yes, crunchy apples paired with chocolate also create a surprisingly delightful combination. But cranberries? That was a pairing I hadn’t truly explored in a sweet, decadent context.

When I think of cranberries, my mind usually drifts to classic Thanksgiving traditions: the shimmering cranberry jelly, the zesty cranberry relish, or my mom’s unique cranberry-apple dish that, despite lacking an official name, is always a huge hit with the kids. The idea of incorporating them into a chocolate dessert felt like uncharted territory for my palate.

However, this month’s Chocolate Party challenged me to do just that: create something delicious with the intriguing combination of chocolate and cranberries. The challenge was on, and I was determined to find a way to make these two distinct flavors sing together.

Finding My Fudge Inspiration: The Queen of Fudge

Initially, I found myself pondering, “cranberries and chocolate… hmmm,” when suddenly, a brilliant idea struck me: fudge! Fudge is wonderfully versatile; you can seemingly toss almost anything into it, and it magically transforms into something delicious. My thoughts immediately turned to Shugary Sweets, a blog that, in my humble opinion, is practically the reigning queen of fudge. Her creations are nothing short of legendary.

If you haven’t explored her fudge recipes, you’re truly missing out. Her Peanut Butter Fudge, for instance, is far from ordinary. I promise you’ll find yourself drooling on your keyboard just by looking at the pictures! And then there’s her Cinnabon Fudge – does that even need an introduction? The name alone conjures images of sweet, cinnamon-spiced perfection. So, it was natural for me to turn to her for inspiration.

Recently, for our Apple Challenge, Shugary Sweets crafted an incredible Apple Pie Fudge. As I reviewed her recipe, I realized how easily I could adapt it by swapping out a few key ingredients to fit the cranberry and chocolate theme. And let me tell you, the result was absolutely spectacular! This fudge recipe, even for an 8×8 pan, yields a generous amount, making it perfect for sharing – or, if you’re like me, for ensuring you have plenty of leftovers to enjoy!

A Sweet Success Story: The Police Department Test

To avoid eating the entire batch myself (a very real possibility!), I decided to take a plate of this new creation over to our local police department. Most of the officers initially eyed me with a look that suggested I might be offering them something rather peculiar. A few, however, offered “that smile” – the polite, slightly skeptical one – and gingerly took a piece.

All it took was for one brave soul to take the first hesitant bite. I felt like I was witnessing that classic “Hey Mikey!” Life Cereal commercial unfold right before my eyes. His expression shifted from curiosity to pure delight, and soon enough, the rest of the department followed suit! They were all coming back for seconds, grabbing extra pieces “for later” – which, let’s be honest, probably meant on the drive home! It was a resounding success, proving that even the most unexpected flavor combinations can win hearts (and stomachs).

White Chocolate Fudge with Cranberries and Pistachios

White Chocolate Fudge with Cranberries and Pistachios

Ingredients

  • 3 cups white chocolate chips
  • 3 cups granulated sugar
  • 3/4 cup butter
  • dash of salt
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pistachios

Instructions

  1. Place chips in the bowl of your mixer. Have your whisk attachment ready to go. In a large (I used medium but it was close) saucepan, heat sugar, butter, salt and whipping cream till butter is melted, stirring occasionally over medium heat. Once butter is melted continue heating until you bring to a rolling boil. Continue boiling for 4 minutes (set a timer) stirring continuously. Watch that you don’t let it boil over. If using a candy thermometer, the temperature should reach 230 degrees.
  2. Pour hot sugar mixture into your mixing bowl and whisk on med speed for about 2 minutes, until all chocolate is melted. Add vanilla, cranberries and pistachios and stir, just till combined. Pour into a parchment lined 8 x 8 pan.
  3. Let set until cooled then refrigerate for 2 hours until cooled. Remove fudge from pan using parchment paper to lift. Slice and enjoy. Store in airtight container.
