  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla or almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups ground nuts, pecans or walnuts
  • 2 cups confectioner’s sugar for rolling

Instructions

  1. Beat butter until creamy, add in granulated sugar and beat again until light and fluffy.
  2. Add the vanilla (or almond extract), all-purpose flour, salt, and finely ground nuts. Mix well until just combined. The dough will appear crumbly. Chill the dough in the refrigerator for about an hour to firm it up, which makes it easier to roll.
  3. Preheat your oven to 325 degrees Fahrenheit (160°C). Roll the chilled dough into 1-inch balls and place them on an ungreased cookie sheet. Lightly flatten them with your palm (just enough so they don’t roll around). Bake for 12 minutes, or until the edges are lightly golden.
  4. While the cookies are still warm from the oven, roll them generously in confectioners’ sugar. Allow them to cool completely on a wire rack. Once fully cooled, roll them in confectioners’ sugar for a second coating. This ensures a beautiful, thick layer of sugary goodness.
