Ingredients

  • 2 cups all-purpose flour

Instructions

In a separate, second bowl, pour the buttermilk. Add the eggs and beat with a whisk or fork until the eggs are thoroughly incorporated into the buttermilk. Stir in the vegetable oil and beat again briefly.
  2. Combine and Cook: Pour the wet ingredients into the dry ingredients. Mix everything together just until combined. It’s perfectly normal, and even desirable, to have a few lumps in the batter – overmixing can lead to tough pancakes! Grease your griddle generously with shortening. Turn the heat to medium and allow the griddle to get hot. Scoop about 1/4 to 1/3 cup of batter per pancake onto the hot griddle. Let them cook for approximately two minutes, or until bubbles begin to form on the surface and the edges look set.
  3. Flip and Serve: Carefully flip each pancake. Allow them to cook for another minute or so on the second side, until golden brown and cooked through. Remove them from the griddle. Continue this process until all the batter is used.
