Brownie Waffle Cookies

Ingredients
- 1/3 cup shortening
- 1/4 cup semi-sweet chocolate chips
- 1 large egg, beaten
- 1/3 cup sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Place shortening and chocolate chips in a microwave proof bowl. Microwave on high for 50-60 seconds, until shortening is completely melted. remove from microwave and stir until chips are completely melted and mixture is smooth. Set aside to cool.
- In a mixing bowl, Beat together, egg, sugar, milk and vanilla. Add in Chocolate mixture and mix again.
- Combine flour, baking soda and salt. Stir into batter, just until combined. Do not over mix.
- Preheat waffle iron on medium heat.
- Drop batter by tablespoon full onto waffle iron. (depending on the shape of your waffle iron, you may be able to make more than one cookie at a time) Cook for about 3 minutes, just until edges start to become crisp. Remove from waffle iron and let cool completely on racks.
- Lightly dust with powdered sugar if desired. Store in an air tight container.
